Oven baked avocado

When I ever feel like treating myself for breakfast or fancy a cheeky snack, and miraculously I have the right ingredients at home.. I make myself this awesome oven baked avocado with a runny egg.

So what you need:

  • 1 Ripe avocado
  • 2 Eggs
  • Salt & Pepper
  • Red chili
  • Paprika powder (normal or spicy)
  • Nutmeg (powder or the nut)
  • (a grater if you have a nutmeg nut)
  • Aluminium foil
  • A bowl
  • A Spoon
  • A knife

Pre heat your oven at 170 degrees celsius.

Cut the avocado lenghtwise and remove its hart –sounds so cruel- and scoop a little bit more out so your egg will fit (depends if you have small/medium/large range eggs). If you prefer, you could sqeeze a little lime juice on your avocado for a little bit of zest. Make a little boat of the aluminium foil so the avocado is stable.
Now it is time for business: putting the eggs in the avocado.

So a tip is to break your egg in the bowl and gently.. GENTLY scoop your egg yoke out of the bowl with a spoon and place it
Now you can fill the avocado with some of the egg white in too, depending on how much it fits! Otherwise we cracked the egg in the bowl for nothing, haha.

Seasoning time! Sorry, I cannot give you any measurements as I never really tend to follow recipes or exact measurements – except for desserts –. So you can season the avocados as you like. I used a bit of salt and pepper, a sniff of paprika powder, some chilies and a tiny bit of nutmeg – Nutmeg can be really powerful so be careful with that -.

Put these babies in the pre heated oven for about 20 minutes. Another tip is to check on it a couple of times; the eggwhite should be white,- not too runny, and your egg yoke should feel lukewarm to the touch.

And then VOILA! Your breakfast / cheeky snack is ready to be demolished.

  2. I am not sure actually. Think I saw a picture somewhere on instagram or pinterest and did some experimenting. First few times were a bit of a mess with the eggs, haha! Cracked them straight in the avocado.. Not a good idea 😂. Egg white everywhere, let me know how it went!❤️
